How do you know if you’d had a really good piece of salmon?

Rebecca Forwood, the founder and owner of The Fishwives, can easily answer that question. She just needs to look back to the first time she had salmon, and compare it with the others she’s had since then.

“My mother gave it to me to try when their first shipment of salmon arrived in Hong Kong in ’91,” she recalls.

“It was like nothing I’d tried. I thought I didn’t like salmon… until then. It literally melted in your mouth.

“To this day, I don’t think there’s any salmon better than New Zealand (NZ) King Salmon.”

In the beginning

The Fishwives was established in Hong Kong in 1992 by Rebecca’s mum and aunt. Back then, they brought in fresh NZ King Salmon to Hong Kong.

Rebecca took over The Fishwives in 1997 and brought it to Singapore in 2001, where she grew the business further. They were the first gourmet fresh food retailer in Singapore to bring in fresh NZ salmon in those days. (“We paved the way for everyone else!”)

And they taste just as good (even better) than they look

Now, The Fishwives is a shop that not only brings in fresh NZ King Salmon, but other seafood from New Zealand and Australia as well. Everything you find there is high quality, sustainably sourced, fresh and “clean”, with no additives and genetic modifications. They deal directly with the farmers and suppliers, and rarely use a third-party distributor unless they have to, Rebecca adds.

They also sell free-range meats, deli items, wines and eco-friendly home products.

“I love it when I convert people to salmon!” she admits.

“If someone comes into the shop and says they don’t eat salmon, I give them a piece to take home and try – and 90% of the time they will come back and say, ‘Wow. I never thought I’d like that.’

“It’s a great feeling when you introduce someone to something you love, and they end up loving it too!”

The Fishwives has an outlet at Cluny Court, but you can order from their website and have your salmon and other foods delivered.

But before your NZ King Salmon arrives, you can plan ahead and think of ways to prepare, serve and eat it. Rebecca lays out her favourites.

#1 Sashimi

“This is my ultimate. There’s nothing better than opening a packet of fresh salmon and slicing it up, and having fresh wasabi and pickled ginger. Yummy!”

#2 Miso salmon

“This is also so delicious baked in the oven. It’s got lovely Japanese flavours.”

#3 Baked whole Asian salmon

“This is a great dinner party/entertaining dish.”

#4 Sticky salmon

“My kids’ favourite. Served with rice and veggies, it’s so good for you and so yummy!”

#5 If you have leftovers

Leftover salmon… is that even a thing? 😉

“There isn’t any usually, but if there is, it is always yummy thrown into a salad or added to a frittata or quiche,” she suggests.

More options

Said to be rich in protein, omega 3 fatty acids and vitamin B, salmon is touted as healthy for you.

But when it comes to seafood, you don’t have to stop with salmon. The Fishwives also offers red snapper, king prawns, scallops and more.

“Luckily, when it comes to seafood, the appreciation is there for all varieties, and we don’t really have a product that doesn’t get its fair share of popularity,” Rebecca observes.

“If I had to say one (that I wish people knew more about or appreciated), it might be the kingfish. People often don’t know what to do with it, and it’s one of the most delicious fish.

“It’s delicious as sashimi, but also great quickly seared, like tuna.”
